Hello Farm-ily!
Happy July. We are having a great summer so far, and pray you all are as well. Lots of fun summer staples are starting to come in from the garden. Tomatoes, cucumbers, peppers, eggplant, and squash. The okra is still very tiny, but making good progress! :)
We have a surplus of Zucchini and yellow squash! Here are some fun recipes for using them. We are going to be putting some bulk boxes together for those of you who would like to put some up for the winter months. OR just want a bunch of yummy squash right now! Some of our favorite ways to have squash is sliced in a cast-iron skillet with butter and onions. YUM! We have also been grilling them in strips with some olive oil, salt and pepper. We love setting up assembly lines for getting things into the freezer so we can enjoy ‘summer’ in the winter! So for this recipe we will set up a cutting station, bagging station, and the the little people can take it to the freezer! We like to set up bags of sliced squash that we can then thaw and make into the pie. So fun. Another fun way to save squash for the winter is shredding it and then freezing it in Ziplocs for making Zucchini bread. (we always add yellow squash too, it adds color and tastes the same:) Squash-Tots anyone? Here is a super fin recipe, and yummy too!
Ok, we also have lots of cucumbers. So if you are in the mood for making pickles, let us know and we will get you a big box of cukes! Here is a recipe for refrigerator pickles that even the little kids can do. We made a batch with them, and now they will just bring some more cucumbers, slice them up and add them to the jar!
The flower garden is also near bursting. We have bouquets for sale now. We have one on our table and it adds such cheer to our home.
Weeding the sweet potato patch! Wow, what a lot of work, but doing it together is so fun. Then when you’re all hot and sweaty, prickly from all of the weeds you jump in the pool…AHH! I’m always reminded of a Bernstein Bear’s book when they go to the farm. Farmer Ben says “farming is hard fun”.
We are on baby watch for several animals. Miss Polly is due any day now with Bernese pups, Mercy is 20 days out from her due date of a little Jersey calf, and we are praying for Bonnie Rose who is carrying what will be the first ever foal (baby horse) to be born on our farm!
